Potato and Good King Henry Frittata: A British recipe for a dish of garlic, shallots, potatoes and Good King Henry leaves that are fried until tender and set in eggs.

Ingredients:

2 garlic cloves, minced
3 shallots, minced
4 large potatoes, peeled and thinly sliced
generous handful of Good King Henry leaves, washed and roughly chopped
salt and freshly-ground black pepper, to taste
olive oil
3 eggs, beaten

Method:

Add a little olive oil to a pan, stir in the garlic and shallots then fry gently for about 2 minutes before adding the potatoes and plenty of olive oil (at least 80ml). Season to taste with salt and black pepper then cook over very low heat, stirring occasionally, until the potatoes are cooked through but not browned (about 20 minutes).

After about 15 minutes of cooking stir in the Good King Henry leaves. Continue cooking until the potatoes are done then beat the eggs in a bowl and season with salt and black pepper. Pour the egg mixture over the contents of the pan and cook until the eggs begin to set.

Take off the heat, place under a hot grill and continue cooking until the top is well browned. Serve hot, cut into wedges.
