Potato and Coriander Soup: An Irish recipe for a classic soup of potatoes and coriander in a chicken stock or vegetable stock base.

Ingredients:

900g potatoes, peeled and diced
small bunch of fresh coriander (cilantro) leaves
2 onions, chopped
2 garlic cloves, chopped
2 tbsp olive oil
1.2l chicken stock or vegetable stock
salt and freshly-ground black pepper, to taste

Method:

Separate the coriander leaves from the stems then shred the leaves and set aside.

Tie the coriander stems together.

Heat the oil in a pan, add the add the onion and garlic and fry gently for about 4 minutes or until softened but not coloured.

Stir the potatoes into the pan along with the coriander stems, cover and cook gently over low heat for 5 minutes. Now pour in the stock, bring to a boil, reduce to a simmer, cover and cook for about 30 minutes or until the potatoes are tender and beginning to fall apart.

Remove and discard the coriander stems then pass the potatoes through a vegetable mill (or purée briefly in a blender). Pass the potato mixture through a sieve then return the soup to the pan, add the coriander leaves and allow to re-heat gently (but do not allow to boil).

Serve hot, ladled into soup bowls.
