I’m a big fan ribs in all manner of dishes, particularly if they’re slow-cooked and melting off the bone. However, it’s a versatile cut of meat and this Australian fusion recipe shows just how good they are in a stir-fry.

Ingredients:

500g (1 lb) pork ribs cut into bite-sized pieces
Vegetable or groundnut oil, for deep frying

For the Marinade:
2 tsp light soy sauce
½ tsp sea salt
Pinch of ground white pepper

For the Sauce:
3 tbsp white rice vinegar
2 tbsp sugar
1 tbsp light soy sauce
1 tbsp tomato ketchup
1 ½ tbsp vegetable or groundnut oil
1 green bell pepper, roughly chopped
1 small onion, roughly chopped
1 small carrot, finely sliced
½ tsp finely-chopped garlic
½ tsp finely-chopped ginger
100g (3 ½ oz) pineapple chunks

Method:

Combine all the marinade ingredients in a bowl then add the pork, toss to combine and set aside to marinate for 20 minutes.

Place a wok or large pan over high heat (or pre-heat your deep fryer) and heat to 180-190C (350-375F), or until a cube of bread browns in 30 seconds. Use to deep fry the ribs for 8 minutes. Drain and set aside.

For the sauce, mix together the vinegar, sugar, light soy sauce and ketchup. Set this mixture aside.

Add 1 tbsp oil to a pre-heated wok over high heat. Add the bell pepper, onion and carrot and stir-fry for 2 minutes. Remove with a slotted spoon and set aside.

Clean the wok with kitchen paper then add the remaining oil and stir-fry the garlic and ginger for about 90 seconds, or until fragrant. Add the vinegar mixture, return to a boil and add the pineapple chunks. Allow to heat through then return the spare ribs and the stir-fried vegetables to the pan. Stir until heated through then serve immediately.
