Pork Chops with Bananas and Bacon

Apart from the spices, the secret to this dish is to cook it as they do in Aruba, on the barbecue.Also, the bananas you use need to be slightly under-ripe so they keep their shape when cooked.
Ingredients:
4 pork chops
2 tsp ground cumin
1 tbsp
Aruban jerk seasoning
juice of 2 lemons
4 tbsp butter, softened
2 under-ripe bananas
6 rashers of streaky bacon
salt and freshly-ground black pepper, to taste
beer for basting
Method:
Pre-heat your barbecue or griddle pan.
In a bowl, mix together the butter with the cumin, jerk seasoning, salt and black pepper. Rub the resultant mixture all over the pork chops.
Cut the bananas into slices the same width as the bacon then cut the bacon crossways into pieces that will just wrap around the bananas.
Toss the banana slices with the lemon juice then wrap the bacon around the banana pieces and secure with toothpicks.
Put the pork chops on your pre-heated barbecue and cook them for about eight minutes per side.
After the chops have been cooking for about 15 minutes, put the bacon and bananas on the barbecue.
Continue to cook, turning the chops and the bacon/banana skewers over frequently. At this point you can also start basting the chops and bacon with beer (optional, but gives more flavour).
When the chops and bacon-wrapped bananas are thoroughly cooked, remove from the barbecue and serve.
