Jerk seasoning originated in Jamaica, but it has now spread throughout the Caribbean. This is one version from Antigua and Barbuda.

Ingredients:

1 tbsp ground allspice
1 tbsp dried thyme
1 tsp smoked paprika
1½ tsp freshly-ground black pepper
1½ tsp dried parsley, crumbled
1/2 tsp dried oregano, crumbled
3/4 tsp ground nutmeg
3/4 tsp ground canella (substitute cinnamon if not available)
1 tbsp habanero or Scotch bonnet powder
2 tsp granulated garlic
1 tbsp dried caramelized onion
2 tsp sea salt
1 tbsp brown sugar
1 tsp ground ginger
1/2 tsp ground cloves

Method:

For the jerk rub, simply mix all the herbs and spices together in a bowl. Spoon into a jar, secure with an air-tight lid and store in a cool, dark, place.
