Pork and Beans

Ingredients:

450g dried large white beans (eg cannellini or butter beans)
1 large onion, peeled (but whole)
1 head of garlic (whole)
1 tbsp smoked paprika (pimentón)
1 pinch of saffron threads, crushed
1 fresh, meaty, ham hock (about 500g)
225g slab bacon (in one piece)
225g Chorizo sausage
salt and freshly-ground black pepper

Method:

Pick over the beans, place in a large bowl then cover with plenty of water and set aside to soak over night. The following day drain the beans then transfer to a large heat-proof casserole dish before adding the onion, garlic, paprika, saffron, ham hock, bacon and 3l water. Bring to a boil then reduce to a brisk simmer and cook until the beans are tender (about 90 minutes). Every now and then tuck the ham hock beneath the surface of the liquid.

At this point add the Chorizo sausage and cook until the beans and meat are tender and the cooking liquid has thickened (about a further 50 minutes). Discard the onion and garlic then remove the meat and transfer to a bowl. Allow to cool then pull the meat from the ham hock and cut into large pieces. Cut the bacon and chorizo sausages into pieces as well. Return the meat to the the bean mix then season with salt and freshly-ground black pepper. Allow to cool and re-heat before serving. If stored in the refrigerator this pork and beans mix will keep for up to 1 week.
