Ingredients:

For the Filling:
150g poppy seeds
120ml milk
60ml honey
50g finely chopped dates
50g chopped nuts
1 dessert spoon ground cinnamon

For the Pastry:
420g plain flour
70g ground almonds
1 1/2 tsp baking powder
1/4 tsp salt
1 tbsp freshly-grated lemon zest
100g sugar
200g butter
1 egg
1 tbsp lemon juice
2 tbsp water

Method:

Begin with the filling. Simply combine all the ingredients together in a saucepan and mix thoroughly. Bring toa simmer and continue cooking, stirring constantly, until the mixture thickens. Then set aside to cool as you make the pastry.

Combine the flour, ground almonds, baking powder, salt, sugar and lemon zest in a bowl. Cube the butter and rub into the flour with your fingertips until the mixture resembles fine breadcrumbs. Meanwhile, combine the egg, lemon juice and water in a cup and whisk to combine. Add this to the flour mixture and combine thoroughly to dough.

Turn the dough onto a work surface and knead lightly then form into a ball. Divide this into 8 equal parts then roll each portion on a lightly-floured work surface until 6mm thick. Trim each piece into 10cm squares then place about 1 tbsp of the poppy seed filling in the centre of each pastry square. Bring the two ends of the pastry together to form a cylinder with the filling in the centre. Pinch all the ay around the edges to seal then transfer to a greased baking tray. When all the kolaches are done transfer to an oven pre-heated to 180°C and bake for about 18 minutes, or until golden brown and cooked through.
