Pollo con Ajo (Chicken with Garlic) a Classic Mexican recipe for a dish of chicken pieces roasted with garlic in a n olive oil base, where the chicken is served with a sauce made from the garlic.

Ingredients:

1 oven-ready chicken (about 1.5kg) cut into serving-sized pieces
1 head of garlic
120ml olive oil
salt and freshly-ground black pepper, to taste
thyme
rosemary
oregano
sage
fresh celery, chopped

Method:

Wash the chicken pieces then pat dry with kitchen paper. Separate the garlic cloves and peel then.

Grease a roasting tin and arrange the chicken pieces in the base. Scatter over the garlic cloves. Drizzle over the olive oil then scatter over the herbs. Cover with kitchen foil, crimping it securely to the sides of the roasting tin.

Transfer to an oven pre-heated to 160°C and roast for about 90 minutes. After this time, remove the chicken pieces from the roasting tin and arrange on a serving dish to keep warm.

Mash the garlic cloves to a purée in the pan juices. Spoon over the chicken pieces and serve.
