Mix the cabbage with the salt and set aside to drain in a colander for 10 minutes.
Heat 1 tbsp oil in a frying pan. Fry the peanuts and chana dhal for 2 minutes on a medium heat, until lightly coloured. Drain away and excess oil, turn onto a plate and set aside.
Heat the remaining oil in a frying pan add the mustard seeds, asafoetida and cabbage and for 2 minutes. Sprinkle a little water over the ingredients, cover the pan with a lid and cook over low heat for 5 minutes.
Add the soaked poha (drain away any excess water), ginger paste, sugar, lemon juice and salt. Mix well and cook for 10 minutes.
Garnish with the coriander leaves, fried peanuts and dhal.
