A boiled or poached chicken is an essential component of many dishes, especially in North African cuisine, where the cooking liquid is used as a stock for the couscous or rice with which the dish is served.

Ingredients:

1 chicken (about 1.2kg)
2 onions, halved
2 carrots, roughly chopped
2 celery sticks, roughly chopped
2 leeks, chopped
1 handful parsley stalks (or coriander stalks)
3 bay leaves
1 large sprig thyme
generous pinch of black peppercorns
salt, to taste
2l water

Method:

Add the chicken to a large pot along with the vegetables, herbs and seasonings. Pour the water over the top, ensuring that the level of the liquid is at least 5cm above the chicken.

Bring the liquid to a boil, reduce to a simmer then cook for about 45 minutes. Every now and then skim-off any fat that rises to the surface. Depending on the dish you wish to make the chicken can either be cooled in the stock or it can be cooled separately.

To check that the chicken is done, pierce in the thickest part of the leg with a knife. If the juices run clear then the chicken has cooked through.
