Pizza Cordon Bleu

Ingredients:

1 Boboli Pizza Crust
220g sliced button mushrooms
1/2 small onion, thinly sliced
1/2 red bell pepper, thinly sliced
2 tbsp Dijon mustard
60ml sour cream
140g cooked, cubed, chicken breasts (cut into bite-sized pieces)
140g chopped Parma ham (cut into bite-sized pieces)
200g Swiss cheese, grated
oil for frying

Method:

Heat a little olive oil in a frying pan and use to gently fry the onion, mushrooms and bell pepper until soft (about 5 minutes). Take off the heat and allow to cool slightly.

Prepare a Boboli Pizza Crust as per the recipe. When the crust is ready stir together the mustard and sour cream and use to lightly cover the entire base of the pizza. Drain the vegetables then scatter them over the pizza base, followed by the chicken and the ham pieces.

Sprinkle the cheese evenly on top then place in an oven pre-heated to 200°C and bake for about 18 minutes, or until the edges of the base are golden and crisp. Cut into wedges and serve immediately.
