700g oyster meats
120ml vegetable oil
50g rice
1 onion, chopped
2 garlic cloves, minced
2 ripe tomatoes, blanched, peeled, de-seeded and diced
juice of 1 lemon
salt and hot chilli powder, to taste

Heat the vegetable oil in a pan, add the chopped onion and chopped garlic and fry gently to brown (about 5 minutes). Add the diced tomato flesh and cook, stirring constantly, for 1 minute.
Now stir in the rice, and cook, stirring constantly, for 2 minutes. Add 1l water, season to taste with salt and hot chilli powder then bring to a boil. Add the oysters and continue boiling for about 10 minutes, until the rice and oyster meats are tender.
Add lemon juice to taste, turn into a warmed serving bowl, garnish with chopped herbs and serve.
