A Piragua is a Puerto Rican shaved ice dessert, shaped like a pyramid, consisting of shaved ice and covered with fruit flavored syrup. Piraguas are sold by vendors, known as piragüeros, in small colorful pushcarts.
Ingredients:
For the Shaved Ice:
1l ice
food colouring (optional)
For the Coconut Topping:
2 tbsp sweetened condensed coconut milk
120ml coconut milk
1 tsp ground cinnamon
Method:
Begin with the topping. Whisk together the condensed milk with the coconut milk and cinnamon until smooth and creamy. Transfer to your refrigerator and chilli in the refrigerator until ready to use.
Shave the ice: Using a blender, food processor, or ice shaving machine, shave the ice until similar to snow in consistency. If you want coloured versions, colour the water before freezing so you end up with coloured shaved ice.
To serve: Fill cups with the shaved ice before pouring the coconut mix over top.
