This is a classic American recipe for Chokecherry Syrup that's been adapted to be prepared with British bird cherries. For making bird cherry syrup ensure that you allow the bird cherry juice to drain naturally when you make it so that the resultant syrup is not cloudy.
Method:
Combine the ingredients in a pan and cook over medium heat until the syrup is thick enough to coat the back of a spoon (about 15 minutes). Pour into sterilized jars that have been warmed in an oven at 100°C for 20 minutes. Seal and allow to cool completely then store in the refrigerator.
Use anywhere you would use any flavoured syrup, such as over ice cram or on top of breakfast pancakes or as a base for desserts.
