Pilau ya Nyama (Pilau with Meat)

Mayotte has several culinary influences and one of them is Swahili cuisine, as in this dish of rice and meat.

Ingredients:

1 kg meat (goat typically, but any red meat will do), diced
600g white rice
2 onions, chopped
6 tomatoes, blanched, peeled and chopped
1 tin tomato paste
2 tbsp palm oil
1 tsp ground cumin
salt and black pepper to taste

Method:

Add the meat to a pot and cover with salted water bring to a boil and cook for 20 minutes. Meanwhile add the oil to another pan and add the onions. Fry until soft then add the tomatoes, tomato paste and spices. Season and add the meat when ready.

Allow to cook for 5 minutes then wash the rice and add to the pot. Mix in and simmer for 25 minutes, until the rice is done. Cover and allow to simmer for a further 10 minutes then serve.
