Haitian Pickled Pepper Condiment is a staple pantry item in every household if you’re Haitian. If you like spicy food, you will love this condiment! This is a spicy punch in the face, so it is meant to be used a little at a time. Once you make this wonderful condiment, it will last for months.

Ingredients:

6 Scotch Bonnet chillies, sliced into strips
350g cabbage grated or finely shredded with a knife
50g carrots, grated
150g bell peppers, julienned
a few sprigs of thyme
10 cloves
1 tsp black peppercorns
1.25l white vinegar
80ml lime juice

Method:

Combine the cabbage, carrots, bell peppers, Scotch Bonnet chillies and thyme in a bowl and toss well until thoroughly blended.

In two 1l glass jars, pour half of the vinegar and lime juice in each jar. Also divide the cloves and black peppercorns between the jars.

Add the vegetables to the jars – half in each jar.

Set aside to pickle for at least 1 day. Note, however, that the longer you leave it, the spicier your Pikliz will be.
