Pia Sua (Coconut Pudding)

Ingredients:

500ml of coconut cream
cocoyam starch (substitute cornflour) for thickening
Sugar, to taste (but don't make it too sweet)

Method:

Mix together the coconut cream and sugar in a bowl.

Pour into a saucepan, bring to a simmer and cook for 3 minutes. At this point sprinkle over and stir in the cocoyam starch (or cornfloour).

Continue sprinkling and stirring constantly until the mixture no
longer sticks to the side of the pot.

Take off the heat and leave to cool before serving.

Use a spoon to cut into chunks and serve either in bowls or in coconut halves.
