Pescado Frito (Fried Fish) a Classic Ecuadorian recipe for a dish of sea bass fillets marinated with lemon and garlic that are dusted with flour, fried and served with a tomato, bell pepper, onion and lettuce salad.

Ingredients:

700g sea bass fillets
1/2 tsp ground white pepper
1 tsp, garlic, minced
4 lemons
100g wheat flour
oil, to taste
1 head of lettuce
1 bell pepper, sliced into julienne strips
1 tomato
2 onions, cut into julienne strips
salt, to taste
oil for frying

Method:

Season the fish fillets with the garlic, salt, white pepper and the juice of 2 lemons and the zest of 1 lemon juice then dust liberally with flour.

Heat oil in a pan, add the fish fillets and fry until nicely browned on both sides and cooked through.

Wash the lettuce and drain then arrange in a bowl with the tomato, bell pepper and onion. Add the juice of 2 lemons, season with salt and drizzle over olive oil to taste.

Serve the salad to accompany the fried fish.
