Peruvian Seviche

Peruvian Seviche is a traditional Peruvian recipe for a classic dish of fish cooked by marinating in lime juice with garlic, chillies and herbs and which is served with cold, mashed, sweet potatoes. Ingredients:

450g fillets of corbina, red snapper or any firm, good quality, white fish
freshly-squeezed juice of 3 lemons
freshly-squeezed juice of 3 sour oranges or limes
1 red onion, thinly sliced
salt and freshly-ground black pepper, to taste
pinch of cayenne pepper
1 garlic clove, minced
1 hot chilli, finely chopped
2 tbsp flat-leaf parsley, chopped
2 tbsp coriander (cilantro) leaves, finely chopped

Method:

Peruvian cooks will gut, clean and de-scale the fish before soaking in salt water for 10 minutes. Only then are they filleted.

Cut the fish fillets into chunks then arrange in a shallow bowl. Place the onion slices on the fish then add all the remaining ingredients before pouring the citrus juices over the top. Cover the bowl and transfer to a refrigerator to marinate over night (or for a minimum of 5 hours).

The acid in the citrus fruit will effectively 'cook' the fish flesh by pickling it. When ready to serve arrange on a bed of lettuce and garnish with cold, mashed, sweet potatoes and/or corn on the cob.
