This is the traditional Spanish method of cooking and serving gooseneck barnacles as tapas, where they are first boiled and then dipped in vinegar or lemon solution.
Ingredients:
16 gooseneck barnacles
2l water
1 ½ tbsp coarse sea salt
4 tbsp lemon juice (or white wine vinegar)
4 tbsp water
Method:
Begin by cleaning the barnacles. Gently scrub any debris or dirt off the barnacles under cold running water then remove any visible impurities using a soft brush.
Combine the water and salt in a 4l saucepan. Bring to a boil over medium heat, stirring to dissolve the salt.
As soon as the water is boiling, add the gooseneck barnacles and bring to a simmer. Cook for about 5 minutes, or until just tender.
Drain immediately, then place in a bowl with the lemon juice or wine vinegar and the water. Allow to cool then chill before serving.
Arrange on a serving dish and accompany with lemon wedges.
