Pepper Soupe de Poisson (Fish Pepper Soup): A Cameroonian recipe for a stew of fish with spices and hot chillies that's traditionally served with rice.
Method:
Scale, gut and wash the fish then slice into steaks. Place these in a large bowl, season to taste with salt and set aside.
Crush the spices, onion and tomatoes to a paste.
Place the fish pieces in the base of a pan then pour over the spice and tomato mix before adding the oil.
Add enough water to completely over the fish then place over low heat. Bring to a simmer and cook, covered for about 20 minutes, or until the fish is cooked through.
Adjust the seasonings to taste. Add more chilli powder if not hot enough to your taste. If desired, you can add a Maggi cube at this stage. Continue cooking for 5 minutes more.
Serve hot on a bed of rice.
