Peking Duck

Peking Duck a Classic Chinese recipe for a dish of a duck roasted until crispy that's typically served in pancakes with spring onions, cucumber and plum or hoisin sauce.

Ingredients:

1 duck (about 2kg)
1.7l boiling water
1 tbsp honey
1 tbsp Shaoxing rice wine
1 tsp white rice vinegar
1 cucumber, peeled, de-seeded and cut into julienne strips
10 spring onions (white parts only), shredded
30 Peking duck pancakes
plum sauce and/or hoisin sauce to accompany

Method:

Begin with the duck. Massage the skin all over to separate it from the meat.

Pour boiling water into a large saucepan then stir in the honey along with the rice wine and vinegar. Gently lower in the duck and baste with the hot liquid for 1 minute. Remove the duck from the pan and hang it up to dry over night.

The following day, arrange the duck on a rack above a roasting tin, transfer to an oven pre-heated to 200°C and roast for at least 1 hour, or until the skin is very crispy and the duck is cooked through.

To serve, sit the duck on a warmed serving dish and bring to the table along with the cucumber, spring onions and pancakes. Carve the skin off the bird then shred some of the flesh.

On an individual pancake, arrange a little of the skin topped with some cucumber and spring onions pieces. Top with a little plum or hoisin sauce then roll up and eat.

Repeat the process with the meat.
