Pease Bannocks

Ingredients:

260g pease-meal (pea flour, or ground peas)
1/4 tsp bicarbonate of soda
1/4 tsp tartaric acid
120g plain flour
buttermilk or soured milk to bind

Method:

Combine the pea flour, bicarbonate of soda, tartaric acid and plain flour in a bowl. Mix thoroughly to combine then add enough of the buttermilk to bring the ingredients together as a soft dough.

Turn onto a floured work surface and roll out about 12mm thick. Use a plate as a template to cut out bannocks from the dough then place on a hot, floured, griddle and cook for 10 minutes then turn the bannock over and cook for 5 minutes on the other side. Reduce the heat and continue cooking until the bannock is cooked through.

You can also shape the dough into loaves, bake in the oven then slice into scones.
