These are great for a barbecue and are a sure-fire hit with children and adults, alike.

Seafood and Bacon Kebabs: Classic British recipe for a barbecue dish of chicken, tomatoes, red onion and yellow bell pepper threaded onto skewers and barbecued (grilled) with a peanut butter marinade.

Ingredients:

For the Marinade:
2 tbsp crunchy peanut butter
5 tbsp soured cream
150g fromage frais (or you can make your own curd cheese/fromage frais)
1 tbsp lemon juice
1 garlic clove, peeled and crushed
1/2 tsp freshly-grated root ginger
1 tsp light soy sauce
1 tsp ground coriander seeds
Tabasco sauce, to taste

For the Chicken:
2 skinless chicken breast fillets
8 cherry tomatoes
1 red onion, peeled, quartered and split into pieces
1 yellow bell pepper, de-seeded and cut into pieces

Method:

Combine all the marinade ingredients in a bowl and whisk thoroughly.

Cut the chicken breasts into 2cm cubes and arrange in a shallow dish. Spoon over the marinade and stir well to combine. Cover with clingfilm (plastic wrap) and chill in the refrigerator for at least 4 hours, stirring the meat occasionally to ensure it marinates evenly.

After this time, thread the chicken, tomatoes, onion and bell peppers onto four skewers. Brush with any left-over marinade then set on a barbecue rack over medium-hot coals (alternatively grill them). Cook for between 15 and 20 minutes, turning frequently and brushing with the marinade.

Once thoroughly cooked, serve immediately accompanied by rice and a salad.
