This is a classic British recipe for a soup of peas and lettuce flavoured with lovage leaves.
Ingredients:
1 medium onion, chopped
2 tbsp
500g fresh or frozen peas
1 small Cos or romaine lettuce (or 2 Little Gem lettuce), shredded
700ml good-quality chicken or vegetable stock

lovage leaves (reserve 4 for garnish)
salt and freshly-ground black pepper, to taste
Method:
Heat the butter or butter and oil mix in a pan then add the onion and sweat down gently for about 8 minutes, or until softened. Add the peas and shredded lettuce then pour over the stock and bring the mixture to a boil.
Reduce to a simmer and cook for about 5 minutes, or until all the peas are tender. Take off the heat and add 6 of the lovage leaves. Allow to cool slightly then liquidize in a blender or using a hand-held stick blender. It is best not to blend until completely smooth as some texture gives this soup character. Adjust the seasonings to taste.
This soup can either be served cold as a summer soup or it can be re-heated to be served warm (do not allow to boil if re-heating).
Finish the soup by garnishing with shredded lovage leaves just before serving.
