Pe Kyar Zan Thoke (Glass Noodle Salad) a Classic Myanmar recipe for a substantial salad of prawns, porks and glass noodles in an onion, tomato and green chilli base with fish sauce, lime juice, vegetable oil and peanuts.
Bring a pan of water to a boil. Add the glass noodles and cook for about 10 minutes, or until soft. Drain the noodles and set aside.
Wash and peel the prawns. Heat a little oil in a pan, add the prawns and cook for about 3 minutes, or until just pink. Remove and set aside.
Season the pork with a little salt. Add a little more oil to the pan and use to fry the pork until cooked through.
Add the glass noodles to a large bowl and toss with the prawns, pork, onions, tomatoes, sugar, green chillies, remaining oil, fish sauce and lime juice. Mix well to combine, then divide the salad mixture between four plates.
Sprinkle over the shredded saw-leaf herb and serve.
