Pe Htamin (Lentil Rice) a Classic Myanmar recipe for an accompaniment of rice cooked with lentils, raisins and cashew nuts in a lightly-spiced base.
Ingredients:
450g rice
5 caraway leaves
120g cashew nuts
120g raisins
240g lentils
1l water
4 tbsp butter
4 tbsp oil
1 tbsp sugar
2 tbsp salt
1/2 tsp ground turmeric
Method:
Wash the rice thoroughly and drain. Combine the ingredients in a flame-proof casserole or large pan.
Bring to a boil, reduce to a simmer, cover with a sheet of foil then sit the lid securely on top. Cook gently over the lowest possible heat for 25 minutes, or until the rice is tender.
Take off the heat and set aside for 10 minutes to rest. Fluff the rice with a fork before serving.
