This is a classic slow-cooked lamb and coconut milk curry that's been adapted to be cooked in a pressure cooker (or instant-pot style electric pressure cooker).
Ingredients:
3 tbsp sunflower oil
1 onion, sliced thinly
2 garlic cloves, crushed
thumb-sized piece of ginger, peeled and grated
750g diced lamb meat (shoulder or leg)
4 tbsp medium curry paste
400g tin chopped tomatoes
400g tin coconut milk
1 tsp garam masala
25g bunch of coriander, leaves picked and chopped, to garnish

Crispy poppadums, to accompany
Method:
Put your pressure cooker over medium heat (or set an instant pot to the sauté setting). Once hot add the oil and use to fry the onion with a pinch of salt for 8-10 minutes, stirring occasioinally. Once the onions are beginning to colour add the ginger and garlic and cook for 3 minutes more.
Increase the heat then stir in the lamb and curry paste. Using the residual cook the lamb, stirring until the lamb changes colour. Add the tomatoes, bring to a simmer and cook for 5 minutes before adding the coconut milk. Bring to a boil, cover with a lid then bring to high pressure (for an electric pot turn off the sauté setting, put on the auto setting and cook for 15 minutes), cooking for 15 minutes.
Allow to cool for 5 minutes then release the pressure, giving everything a stir. Test to ensure the lamb is tender — if not, replace the lid and pressure cook for 5 minutes more. Once the lamb is tender stir in the garam masala, turn into a warmed serving dish, garnish with the coriander leaves and serve with rice and Crispy poppadums.
