Pavo de Navidad (Spanish-style Christmas Turkey) a Classic Spanish recipe for a dish of roasted turkey with a stuffing of chicken meat, bread, fruit and brandy that is traditionally served at Christmas time.

Ingredients:

1 whole, oven-ready turkey
750ml chicken meat, chopped
200ml milk
1 egg
200g breadcrumbs
100g prunes
50g raisins
1 green apple
white wine
150ml brandy
salt and freshly-ground black pepper, to taste

Method:

Mix the breadcrumbs with the milk and set aside to soak for 10 minutes

Season the turkey both inside and out liberally with the brandy, salt and black pepper.

Chop the prunes and apple and mix in a bowl with the chicken meat, raisins, soaked breadcrumbs and egg. Mix w,ell to combine, season to taste then use to fill the body cavity and neck of the turkey.

Weight the turkey with the stuffing. Sit the bird on a rack in a roasting tin. Transfer to an oven pre-heated to 165°C and roast for 40 minutes per kg, basting from tine to time with white wine.

For the final 20 minutes of cooking, increase the oven temperature to 200°C (this ensures that the skin of the bird is nicely browned). Remove from the oven, sit on a chopping block, cover with foil and allow to rest for 20 minutes.

Serve the turkey on a bed of lettuce and cabbage leaves.
