This is a simple but tasty dish of eggs scrambled in a tomato paste that are served on a bed of pasta.
Ingredients:
350g spaghetti (or your preferred type of pasta)
6 tomatoes, chopped
1 small tin of tomato purée
2 onions
5 eggs
2 sprigs of coriander (cilantro), chopped
4 tbsp groundnut oil
1/2 Maggi cube (or bouillon cube)
salt and freshly-ground black pepper, to taste
Method:
Chop the tomatoes and onions into chunks. Heat the oil in the base of a flame-proof casseroled dish, add the onions and fry for about 6 minutes, or until golden brown. Add the tomatoes, coriander and the tomato purée. Stir to combine then bring just to a boil.
Season to taste with salt, reduce to a simmer, cover and set aside to stew for 10 minutes.
In the meantime, crack the eggs into a bowl and beat them well. Pour the eggs over the prepared tomato mixture and reduce the heat to low. Cook the egg mixture gently, stirring constantly (just as you would for scrambled eggs). Adjust the seasonings to taste and cook until the eggs are just set.
In the meantime, cook the pasta according to the packet instructions, but add the 1/2 Maggi cube to the water used to cook it.
Drain the pasta, arrange on a serving dish and pour over the egg mixture.
Serve immediately.
