This is a classic French recipe for a sweet shortcrust pastry, excellent for tarts and for fruit or jam fillet pasties (turnovers).

Ingredients:

250g flour
125g unsalted butter, diced
70g caster sugar
1 pinch of salt
1 egg

Method:

Sift the flour into a large bowl then mix in the caster sugar and butter to combine.

Add the butter and use your fingers to rub into the flour until the butter is completely incorporated into the flour and the mixture resembles slightly coarse sand.

In a separate bowl, lightly beat the egg then add it to the shortcrust mixture. Mix gently until all the ingredients are well combined. However, be careful not to overwork the dough or you will get too much gluten extracted and the dough will be tough and not crumbly.

Shape the dough into a ball, cover with clingfilm (plastic wrap) then place in your refrigerator and chill for 30 minutes. This will help the dough firm up before rolling it out and using it.
