Passion Fruit Souffle: A classic British souffle of passion fruit in a custard base with egg whites baked in ramekins until browned and risen.

Ingredients:

200ml fresh custard
3 passion fruit
2 egg whites
softened butter, for greasing

Method:

Pour the custard into a large mixing bowl then halve the passion fruit and scrape out the seeds and pulp. Beat the resultant mixture with a metal spoon until well combined.

Add the egg whites to a clean and dry bowl and beat with an electric whisk until they stand in stiff peaks. Fold a quarter of this mixture into the custard. Then, with a metal spoon carefully fold in the remaining egg whites.

Spoon the resultant mixture into well-greased ramekin dishes. Wet your forefinger and run this around the inside of the ramekin rims. This creates a trough in the soufflé mixture, which helps them raise straight up.

Set the ramekins on a baking tray then transfer to an oven pre-heated to 200°C (Gas Mark 6) and bake for about 8 to 10 minutes, or until the soufflés are well risen and golden brown on top.

Serve immediately.
