Passion Cake

Passion Cake: Classic British recipe for a carrot cake containing walnuts and pineapple that's served with a cream cheese frosting.
Ingredients:
275g plain flour
4 tsp baking powder
1/2 tsp ground cinnamon
150g light brown sugar
100g carrots, peeled and grated
50g walnuts, chopped
2 medium eggs, beaten
100ml sunflower oil
1/2 tsp vanilla extract
400g tin of crushed pineapple, drained
For the Frosting:
75g butter
75g soft cream cheese (or you can use my
home-made cream cheese recipe to prepare your own)
175g icing sugar, sifted
1/2 tsp vanilla extract
Method:
Sift together the flour, baking powder and cinnamon into a large bowl. Stir in the sugar, carrots and walnuts. Form a well in the centre of these ingredients then add the eggs, oil, vanilla extract and pineapple. Beat well with a wooden spoon to combine.
Turn the resultant batter into a greased 20cm diameter cake tin, the base of which has been lined with baking parchment. Lightly level the surface of the batter then transfer to an oven pre-heated to 180°C (gas mark 4) and bake for about 70 minutes, or until cooked through and lightly browned on top.
Set aside to cool in the tin then turn out onto a wire rack and remove the baking parchment.
For the frosting, combine the ingredients in a bowl and beat thoroughly together. Swirl this frosting over the top of the cake. Turn onto a serving plate and chill for 30 minutes before slicing and serving.
