Parsley Pesto

This is a pesto from Saint Pierre and Miquelon prepared with the Islands' favourite herbs, parsley and savory.

Ingredients:

60g flat-leaf parsley
1 tbsp winter savory leaves
1 garlic clove, crushed
1 tbsp pine nuts, lightly toasted
6 tbsp extra virgin olive oil
25g Parmesan cheese, freshly grated

Method:

Place the herbs in a blender along with the garlic, pine nuts, olive oil and a pinch of sea salt. Blend to a smooth purée then transfer to a bowl and mix in the Parmesan cheese. Season to taste and serve.

This makes an excellent pesto for spreading over fish fillets before grilling because of the acidity of the sorrel.
