This is a classic dish of round balls of potato, fried in butter.

Ingredients:

300g floury potatoes, peeled
1 tbsp of olive oil
15g unsalted butter
1 sprig of thyme
1 garlic clove, crushed (leave unpeeled)

Method:

Using a 2cm diameter scoop or melon-baller scoop out round balls from the potatoes (you will need about 10 per person).

Bring a large pan of lightly-salted water to a boil. Add the potatoes and parboil for 5 minutes. Drain in a colander, refresh in a bowl of cold water to stop further cooking then drain and dry on kitchen paper.

Place a frying pan over medium-high heat. Once hot add the oil and butter. When the butter is sizzling add the balls of potato, the thyme and the lightly-crushed garlic.

Fry, turning occasionally, until the potatoes are golden brown all over and cooked through.

Remove with a slotted spoon, drain on kitchen paper and serve (discard the garlic and thyme).
