Ingredients:

8 boneless, skinless chicken thighs, cut into 2cm cubes
1 papaya, peeled, de-seeded and sliced thinly
425ml coconut milk (canned, bottled or fresh)
1 onion, chopped
Olive oil for frying

Method:

Place a frying pan over high heat. Once hot add a glug of olive oil and use to fry the chicken until they're almost cooked through (about 5 minutes).

Add the chopped onion and cook until the onion becomes transparent (about 5 minutes).

Add the papaya slices and cook for 5 minutes more.

At this point, take the pan from then heat and add the coconut milk.

Serve immediately, accompanied by poi.
