Pap II

Pap II: A South African recipe for a accompaniment of a thick porridge made from white maize meal optionally flavoured with a little tomato, here shown topped with chakalaka.

Ingredients:

300g (2 cups) mealie meal (white maize meal)
900ml water
1 plum tomato, blanched and finely diced (optional)
salt, to taste
2 tbsp butter or margarine (optional)

Method:

Pour the water into a large pan and bring to a boil. Season to taste with salt then, whilst beating constantly with a fork add the maize meal in a slow, steady, stream.

Continue beating until the mixture is smooth then stir in the tomato pieces (this is a restauranty touch and is optional) cover, reduce to a simmer and cook until the pap is thick and fluffy. Whilst the pap is cooking, stir occasionally with a strong wooden spoon.

For a richer flavour work the butter or margarine into the pap about 5 minutes before it's due to be served.

Rather than a thick porridge or gruel, pap should have a fluffy, mashed potato, like consistency. Indeed, in South Africa this is often served with meat and gravy, in exactly the same way that mashed potatoes would be served in Britain.

Some add a little garam masala or milk or curry powder to their pap to give extra flavour.
