Pâo de Batata de Assadeira (Baked Potato Bread) a classic Brazilian recipe for a rich yeasted bread containing mashed potatoes in the dough that is served sliced.

Ingredients:

30g bread yeast (or 1 sachet active dried yeast mixed with 2 tbsp lukewarm water)
1 tbsp sugar
1 tbsp salt
2 eggs
150g boiled and mashed potatoes (use whilst still hot)
250ml warm milk
120ml corn oil (or sunflower oil)
500g wheat flour

Method:

Cream together the yeast with the sugar in a bowl. Mix in the milk then add the lightly-beaten eggs, oil, salt and mashed potatoes.

Stir in the flour and bring together as a dough. Knead well for at least 6 minutes (you should have a soft dough).

Turn this dough into a greased loaf tin then transfer to an oven pre-heated to 180°C and bake for about 25 minutes, or until the bread is risen and lightly browned on top. Like all loaves, when cooked it should sound hollow when rapped on the base.

Allow to cool in the tin for 10 minutes then turn out onto a wire rack to cool further.

Serve warm, cut into slices.
