Pangratto

Method:

Place sourdough (4 slices) and rosemary leaves (1 tbsp) into a food processor and process into crumbs.

Heat the olive oil and butter together in a frying pan until the butter is frothing, then turn the crumb mixture to pan.

Mix well to coat the crumbs in oil and butter, and fry over medium high heat, stirring until crumbs are browned and crisp.
Add the crushed garlic to the breadcrumb mixture and mix well to combine thoroughly. Continue to fry for 1-2 minutes more then take off heat and turn into a bowl. The breadcrumbs will crisp as they cool.

Serve sprinkled over pasta.

A classic alternative would be to use fresh thyme leaves instead of the rosemary. As well as sprinkled over pasta dishes pangratto also works very well as a garnish for rich stews and mashed potatoes.
