Paneer Sukka

This is a classic, rich, Indian curry made with Paneer cheese and flavoured with a range of vegetables and spices. The dish itself is served in a sauce that's almost dry in consistency.

Ingredients:

250g paneer, cubed
2 green bell peppers, chopped
2 onions, finely diced
1 potato, peeled and finely diced
2 green chillies, slit
10 cashew nuts
2 tsp ground coriander seeds
1/4 tsp turmeric powder
2 tsp chilli powder
2cm length of ginger, peeled and chopped
4 garlic cloves, finely chopped
60ml vegetable oil
salt and black pepper, to taste

Method:

Core and de-seed the bell peppers then chop into small pieces. Meanwhile, add the oil to a frying pan and fry the cubed paneer until nicely golden and crispy on all sides. Immediately remove the paneer from the oil with a slotted spoon and immerse in cold water to prevent from cooking further then set aside until needed.

Meanwhile place the chillies, cashew nuts, coriander seeds, turmeric powder, chilli powder ginger and garlic in a coffee or spice grinder and render to a smooth paste. Now use the oil in the frying pan to fry the vegetables until just soft (about 4 minutes) then add the masala (spice mix) and stir-fry for 2 minutes before adding he paneer. Continue cooking until the paneer has heated through then serve immediately with roti (Indian flatbread).
