Panamanian Sancocho

Sancocho is the national dish of Panama. The meats (chicken in this instance, though a mix of meat and salt meat can be used) and vegetables need to be cooked for several hours. The end product is a spicy broth loaded with meats, herbs and spices.

Ingredients:

1kg chicken, jointed and cut into serving-sized pieces
500g cassava (yuca), peeled and cut into chunks
2 plantains, peeled and cut into chunks
2 corn cobs, cut into 5cm lengths
1 onion, chopped
1 green bell pepper, chopped
3 garlic cloves, minced
1 tsp dried oregano, crumbled
1 tsp adobo seasoning
1 tsp ground cumin
2l water
Salt and freshly-ground black pepper to taste

Method:

Pour the water into a large pan and bring to a boil. Add the chicken pieces, onion, green pepper, garlic, oregano, adobo seasoning, cumin, and salt and pepper to taste. Return to a boil, reduce to a simmer, cover and cook for 30 minutes.

At this point, add the cassava, plantains, and maize pieces to the pan. Continue to simmer, covered, for another 30-40 minutes, or until the vegetables are tender and the chicken is fully cooked.

Remove the chicken pieces from the pot, remove the bones and shred the meat. Return the shredded chicken to the pot and stir well. Adjust the seasonings to taste and serve immediately, ladled into bowls.
