This is a classic and very simple to make bread soup from France. The basis of the soup is a panade, a paste made from breadcrumbs, water and butter.
Ingredients:
500ml water
300ml milk
300g slightly stale white bread, cubed
50g butter
salt, to taste
freshly-grated nutmeg
flat-leaf parsley, to serve
Method:
Crumble the bread in a heat-proof bowl. Bring water to a boil then pour 250ml (1 cup) over the bread. Turn the mixture into a saucepan, set over very low heat, season with a little salt and cook, stirring with a wooden spoon for 15 minutes.
At the end of this time, add the butter and continue stirring until melted. In the meantime, scald the milk in another pan. Add enough of the milk to the bread mixture to give the desired consistency. If desired, you can whizz with a stick blender to make everything smooth.
Divide the soup between four bowls, garnish with a grating of nutmeg and a sprig of flat-leaf parsley and serve
