Ingredients:

140g cassava meal (available from Brazilian, African or Caribbean stores)
1 1/2 tsp plain flour
1 tsp baking powder
1 tbsp sugar
1 medium egg
180ml milk
1 tbsp vegetable oil
1 tsp lime juice

Method:

Combine the cassava meal, flour, baking powder and sugar in a bowl. Add the egg and stir to combine then add enough of the milk to form a smooth but thick batter. Stir in the oil and lime juice then pour the batter into a well-greased 20cm diameter non-stick frying pan.

Cook over medium heat for about 10 minutes, being careful that the base of the pan bread does not burn. Turn over and cook on the other side for 3 minutes. Transfer to a wire rack and allow to cool before serving.
