Palets Breton (Breton Pucks)

Palets bretons are butter biscuits and are THE ideal speciality for an afternoon snack or to enjoy with a coffee. They are also known as Traou-Mad (which means "good things" in Breton). Golden and thick, these biscuits are appreciated for their generous size and their crunch. They are named 'palets' because they resemble an ice hockey puck, hence the translation of 'Breton puck'.

Ingredients:

80g lightly-salted butter, melted and cooled
2 egg yolks
80g caster sugar
150g flour
1 sachet (6g) of baking powder
1 soup spoon of runny honey (optional)

Method:

Combine the egg yolks and sugar in a mixing bowl. Whisk until pale and thick then beat in the melted butter before adding the honey, flour and baking powder.

Mix everything by hand to form a smooth dough. Turn onto a floured work surface and roll out into a disk about 4cm in diameter. Cover in clingfilm (plastic wrap) and chill in the refrigerator for 2 hours.

After this time pre-heat your oven to 180°C (gas mark 6). Remove the dough from the refrigerator and unwrap.

Divide into 15 equal-sized pieces, roll into balls then pack into the wells of mini muffin tins.

Transfer to your pre-heated oven and bake for 15 minutes.

Allow to cool in the tin for 5 minutes then turn out onto a wire rack and allow to cool completely before serving.
