Ulkoy is the ultimate Palauan comfort food. These crispy shrimp patties are a staple at family gatherings and local feasts. Made with fresh prawns, grated coconut, and a mix of aromatic spices, they’re a flavour explosion in every bite. The original recipe is from the Philippines and these also show the close relationship between Filipino and Palauan cuisines.

Ingredients:

500g fresh prawns, peeled and finely chopped
100g grated coconut
1 small onion, finely chopped
2 garlic cloves, minced
1 egg, beaten
120g flour
4 tbsp coconut milk
Salt and freshly-ground black pepper to taste
Oil for frying

Method:

Mix the shrimp, grated coconut, onion, garlic, egg, flour, and coconut milk in a bowl. Season liberally with salt and black pepper.

Heat oil in a frying pan over medium heat. Scoop spoonfuls of the mixture into the pan and flatten slightly.

Fry until golden brown on both sides.

Serve hot accompanied by a dipping sauce, an island fruit-based salad or enjoy as they are.
