Palauan Tinola

Ingredients:

1 whole chicken, cut into serving-sized pieces
1 medium-sized green papaya, peeled and cut into wedges
2 tbsp cooking oil
1 onion, chopped
3 garlic cloves, minced
1 thumb-sized piece of ginger, sliced
2 tbsp fish sauce
1l water
Salt and freshly-ground black pepper, to taste
Handful of spinach leaves (or use taro greens, torn)

Method:

Place a pan over medium heat. When hot use to fry the onions, garlic, and ginger until fragrant (about 2 minutes).

Add the chicken pieces and fry until lightly browned on all sides.

Pour in the fish sauce and stir well to coat the chicken.

Add the water and bring to a boil. Reduce the heat and simmer for about 20 minutes.

Add the papaya wedges and continue to cook for another 10 minutes or until the papaya is tender.

Season with salt and black pepper according to taste.

Finally, add the spinach leaves and simmer for another minute until wilted.

Remove from heat and serve hot accompanied with steamed rice.
