Pad See Ew (Stir-fried Pork with Noodles and Broccoli) a Classic Thai recipe for a stir-fry of pork and Chinese broccoli with noodles and eggs in a soy sauce, garlic and palm sugar base.
Ingredients:
500g Chinese broccoli (or purple sprouting broccoli) cut into 5cm lengths (halve any thick stem pieces in half lengthways to even cooking times)
1 tbsp dark soy sauce
1 egg
500g fresh flat rice noodles cut into strips 2cm wide
2 garlic cloves, chopped
2 tbsp light soy sauce
100g thinly-sliced pork strips
1 tbsp palm sugar
groundnut oil, for frying
Method:
Place a wok over high heat and add 2 tbsp oil. Drop in the garlic and stir-fry for a few seconds. Add the pork and stir-fry until the meat is beginning to brown.
Now add the noodles, stirring to separate them. Add the light and dark soy sauces and stir in the sugar.
Stir to mix the seasonings into the noodles and pork then open a hole in the centre of the mixture and drop in the egg. Scramble the egg until almost cooked then fold in the noodles and stir to mix all the ingredients. Now add the broccoli and stir-fry until just wilted.
Take the wok off the heat and pile the mixture on a warmed serving dish. Serve hot with nam pla prik, vinegar and dried and ground chillies.
