Oxeye Daisy Tabbolueh

Ingredients:

360ml water
130g bulgur wheat
1 small cucumber, peeled and diced
1 ripe tomato, diced
150g oxeye daisy leaves, chopped
75g flat-leaf parsley, chopped
several mint leaves, chopped
2 tbsp olive oil
1 tbsp lemon juice
salt and freshly-ground black pepper, to taste
oxeye daisy petals, to garnish

Method:

Add the water and a pinch of salt to a pan, bring to a boil then add the bulgur wheat. Return to a simmer, cover and cook over low heat for about 10 minutes, or until the cracked wheat is tender.

Drain the pan then rinse the bulgur wheat under cold running water and set aside to drain. Transfer the drained bulgur wheat to a bowl then stir in the cucumber and tomato before adding the oxeye daisy leaves, parsley and mint. Drizzle with the olive oil and lemon juice then season to taste with salt and black pepper. Toss to combine then chill for at least 2 hours.

Garnish with the oxeye daisy petals and serve.
