This is a traditional Orkadian mix of potatoes and turnips that's traditionally served with haggis.

Ingredients:

450g boiled potatoes
450g boiled turnips
2 tbsp chopped chives
60g butter
salt and freshly-ground black pepper to taste

Method:

Boil the potatoes and turnips in salted water until cooked through and soft (about 35 minutes). Drain then beat the two vegetables together whilst still hot and mix-in the butter, chives and seasoning.

Make into a smooth paste and, if necessary, continue to beat in a saucepan until piping hot before serving.
