Orange Wakame Salad is a modern American recipe (originating in California) for a classic salad made with a mix of vegetables, thinly sliced cucumber and wakami flakes combined in a serving bowl and garnished with spring onions. Ingredients:
3 tbsp wakame flakes (or dried Atlantic wakame (dabberlocks) broken into flakes)
1 tsp sea salt
1 cucumber, finely sliced (use a mandolin)
2 oranges, peeled with a knife to remove the pith and sliced into rings
5 radishes, thinly sliced
1 spring onion, finely chopped
Method:
Soak the wakame flakes in 300ml warm water for 10 minutes to rehydrate.
Drain thoroughly then arrange the sliced vegetables decoratively in a bowl, scattering a little of the wakame between the layers.
